This natural sweetener is fast replacing sugar as a healthy option. Also called “non-centrifugal sugar” or “superfood sweetener”, jaggery is the unrefined sugar produced mainly in Asia and Africa. About 70% of the world’s jaggery is produced in India.

It is most commonly made from sugarcane by boiling raw, concentrated sugarcane juice till it becomes solid. In some countries it is also made from the sap of coconut and date palm.

Jaggery or gur is made from unrefined sugar and obtained by boiling raw, concentrated sugar cane juice till it solidifies. It is a better alternative white sugar as it only adds empty calories to the body. Jaggery is an unrefined sugar product made in Asia and Africa. About 70% of the world’s jaggery production takes place in India, where it is commonly called “gur.” It can be grated or broken up, and then used as a replacement for refined sugar in any food or drink. In India, it’s often mixed with foods like coconuts, peanuts and condensed milk to make traditional desserts and candies. These include jaggery cake and chakkara pongal, a dessert made from rice and milk.

Jaggery is a sweetener that’s becoming popular as a “healthy” replacement for sugar. What’s more, this sweetener has been given a serious health halo. It’s often referred to as a “superfood sweetener.” 

Color of jaggery can range from golden-yellow to dark brown. The colour and texture are the determining factors in grading jaggery. The lighter jaggery contains more than 70% sucrose.

Jaggery is mainly sold in solid forms but is also found in liquid and granulated forms. Powdered jaggery is also gaining popularity for its ease of use.
