Whole Green moong dal, Green Gram or Green Lentil is a traditional ingredient in Indian cooking, often used in curries. Like other pulses, whole green gram is very nutritious as it is low in fat and high in protein, fibre and other essentiel nutrients. 100 grams of green moong whole lentil contains 24 grams of proteins, 16 grams of fibres, 130 mg of calcium and 6 mg of iron. Whole green moong lentil is also rich in antioxydant. Green Moong Whole Dal is very tasty and nutritious and can perfectly compliment a healthy vegan and vegetarian lifestyle. Moong Dal Lentils are very versatile and is normally prepared as a traditional north indian dal (see recipe of Whole Green Moong Dal in video below) or also in salads, soups and stir-frys. Due to its mild, earthy flavour, green moong dal is best cooked with assertive flavourings. Also called mung dal or moong chilka, green gram whole, moong beans, mung beans, sabut moong dal or mug. 

Whole Moong Dal Lentil need to be soaked in water for at least 4 hours before cooking. The easiest way to cook Moong Whole lentils is with a pressure cooker. After soaking the lentils for few hours, pressure cook them only with water or with spices and oil for 3 whistles. Moong lentils can also be cooked in boiling water for at least 30 minutes or until the lentil is tender.

Lentilles moong dal vertes entières

Les lentilles Moong entières, le gramme vert ou la lentille verte est un ingrédient traditionnel de la cuisine indienne, souvent utilisé dans les currys. Comme toutes les légumineuses, le gramme vert entier est très nutritif, car il contient peu de gras et beaucoup de protéines, de fibres et d’autres nutriments essentiels. 100 grammes de lentilles entières vertes moong contiennent 24 grammes de protéines, 16 grammes de fibres, 130 mg de calcium et 6 mg de fer. La lentille verte moong entière est également riche en antioxydants. La lentille verte est très savoureuse et nutritive et peut parfaitement compléter un mode de vie végétalien et végétarien sain. Les lentilles Moong Dal sont très polyvalentes et se préparent normalement comme un dal traditionnel du nord de l’Inde (voir recette dans la vidéo plus bas), mais aussi dans les salades, les soupes et les sautés. En raison de sa saveur douce et terreuse, le moong dal vert est mieux cuit avec des arômes affirmés. 

La lentille Moong Dal doit être trempée dans l’eau pendant au moins 4 heures avant la cuisson. La façon la plus simple de cuire les lentilles Moong consiste à utiliser un autocuiseur. Après avoir trempé les lentilles pendant quelques heures, faites-les cuire sous pression uniquement avec de l’eau ou avec des épices et de l’huile pour 3 sifflets. Les lentilles Moong peuvent également être cuites dans de l’eau bouillante pendant au moins 30 minutes ou jusqu’à ce que les lentilles soient tendres.

Il est également possible de consommer la lentille verte Moong Dal Split ou seulement la partie interne appelée lentille jaune Moong Dal.
