In India, chai is the national beverage! Masala Chai is prepared with black tea leaves boiled with water, milk and spices. In India, it is preprared at home every morning and then enjoyed in family before starting the day! The aroma and flavor of chai tea keeps you energized all day! Indians are also having some chai throughout the day buying it from chai wallahs or tea vendors. Chai Masala is now also very popular around the world often known as Chai . But, it is actually a wrong translation as Chai only means milk tea whereas masala means spice mix. Indian Chai is traditionally sweet, but is sometimes served without sugar these days. You can use very basic tea leaves to make Masala Chai,  Orange Pekoe, for example. If you don’t have loose tea you can put tea bags in the water-milk mixture too. You can also use Tea India Masala Chai which is tea bags including the tea and the spices! Even more simple!

Chai tea is containing less caffeine than coffee making it healthier. You need to drink at leat 3 cups of masala tea to consume to same amount of caffeine as a cup of coffee. Also, black tea is rich in antioxidants! 

How to make chai masala tea at home? Here is an authentic masala chai recipe if you want to prepare it yourself doing your own mix of spices. Just like they do India: using whole spices!

Time: 10 minutes ∙ Makes 1 large serving ∙ Difficulty Level: Easy

INGREDIENTS

  • 1/2 cup water
  • 1/2 cup milk
  • 1 heaped tsp black tea leaves 
  • 1-2 tsp sugar , or to taste
  • 1-2 pods green cardamom  slightly crushed 
  • 1-2 cloves slightly crushed  
  • 1 inch cinnamon stick 
  • 1/4 tsp ginger powder or a few slivers of fresh ginger (optional)

DIRECTIONS

Add the water, milk, sugar and spices in a cooking pot; stir. Bring slowly to a hard boil, uncovered. The slow boil allows the spices to infuse. Add the tea and continue boiling for 2 mins. (You may have to adjust heat so liquid does not run over.) Turn off the heat; take off the stove and let sit, covered, for 2 minutes. Strain and serve hot.   

The longer you boil and steep the stronger the tea. It could also get bitter. So always strain all the tea you’ve made even if you are going to use some of it later.

Other spices to use, experiment with: star anise , nutmeg powder , fennel seeds , a pinch of  black pepper . The spices used to prepare masala chai are known to have many health benefits in Ayurveda, traditional indian medecine. Most important benefits are related to the digestive system: stimulating appetite and reducing gas. According to Ayurveda, spices used to preprare masala chai are considered calming, vitalizing and mentally clarifying!

1/4 tsp. At tea ginger powder or a few shards of fresh ginger (optional)

DIRECTIONS

Add water, milk, sugar and spices to a pot; stir. Slowly bring to the boil, uncovered. Slow boiling allows the spices to infuse. Add the tea and continue to boil for 2 minutes. (You may need to adjust the heat so that the liquid does not flow.) Turn off the heat; remove from heat and let stand covered for 2 minutes. Filter and serve hot.

The longer you boil, the stronger the tea. It could also become bitter. 

You can also experiment with other spices like star anise , nutmeg powder , fennel seeds , a pinch of black pepper . The spices used to prepare masala chai are said to have many health benefits according to Ayurveda, traditional Indian medicine. The most important benefits are related to the digestive system: stimulate appetite and reduce gas. According to Ayurveda, the spices used to prepare the masala chai are considered to be soothing, vitalizing and mentally clearing!

Also, you can make the vegan version by replacing it with soy milk.
